Cher Tiu stunned by Slovenia’s splendour

 

As she explores Slovenia, Cheryl Tiu feels like she’s walking into a beautiful dream.

We were left in awe as the daughter of Highlands co-founder Jerry Tiu shared on Instagram her postcard-perfect travel photos of Slovenia. From savouring the dishes made by World’s Best Female Chef Ana Roš of Hiša Franko, learning more about Slovenian natural wines, taking a bite of the divine cream cake at magnificent Lake Bled and walking around capital city Ljubljana, she could not help but fall in love with Slovenia.

Now back to Slovenia. So many people in my side of the world are curious about what World's Best Female Chef Ana Roš' food at Hiša Franko is like. • Firstly, you should know that Ana is completely self-taught (she was supposed to be a diplomat!), and this was all out of L❤️VE for her husband Valter. (Watch "Chef's Table" on Netflix & fall in love with their story!💜💙💚💛) • Anyway, she works with ingredients within her surroundings (they are just 3km from the Italian border)– from rivers to mountains– crafting dishes that highlight seasonalities– and also the freshness of their Slovenian produce and ingredients.💞 • Some dishes (not in order of tasting menu): 1) Trout from Hiša Franko's own pond (given by the Fishing Association of Tolmin), with whey and red currants. 3) Sheep cottage cheese ravioli with bone marrow, lovage, in a prosciutto broth and topped with hazelnuts 4) Sardine with candied lemon and fennel 5) Green bean scogliera– her take on her favorite Italian pasta but using green beans as noodles– still cooked with and topped with seafood 6) Young carrot with oats granola topped, raw almonds–the most Instgagrammed of their dishes!
